This is one of my all time faves. I remember my mom making several loaves for neighbors at the holidays and as I kid I ate this buttered! It's a sweet bread, so it's really like a cake. These days, I skip the butter (it really doesn't need it and I don't need the fat ;). This bread is moist and soft inside with a delicious crust on top. My kids love it too...green flecks and all!
Ingredients:
3 eggs
2 cups sugar
1 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon baking powder
2 cups shredded zucchini (I leave the skin on and use a cheese grater)
3 cups all purpose flour
1 teaspoon cinnamon
Directions: In a large bowl beat eggs until foamy, add all other ingredients. Mix will be thick and look kind of slimy (don't worry...trust me, it's good). Pour into a greased loaf pan (one large or two small). Bake at 350 degrees for one hour and forty minutes. Cool, remove from pan (I loosen the sides with a spatula first) and serve. Yum!

Looks and sounds good, wish I liked to bake. I just really don't, and rarely turn on the oven in summer months. Silly to turn on the oven which heats the house, when you're paying to cool the house with our ac on?

I LOVE Zucchini Bread! yummo! I make it almost weekly! =) and I love Your Post Card Collection! we are doing a post card project... I am in serious need of updating it!! maybe this week!? =) how are you acquiring yours? =) I am reading my old blog posts from Jan when I started blogging and you were one of my first blog commenters! when I got busier aka overwhelmed I lost you in the midst I think!! anyway... I have never tried zucchini bread. I always worry it's going to taste all veggie like. I'm dumb. I know.
This is the same recipe I used for years.My kids (now grown) love it.Its a comfort food to them.I recently lost this recipe and couldn't remember measurements.I was glad to find this. There isn't a better zucchini bread out there.At least not to my families liking. Thanks for the post!!!! My family thanks you ahead of time.
