Here's my recipe for a quick and easy warm Chili dinner. It's hearty and low fat, and makes a tasty dinner. You can even make it ahead and freeze for a quick week night meal in a pinch.
Ingredients:
1 lb lean ground turkey (or beef if you prefer)
1/2 small onion diced
3 tbsp chili powder
3 cans Bush's Chili beans (the red beans in chili sauce)
3 cans Del Monte diced tomatoes Zesty Chili Style
1 can sweet corn, drained
1/4 cup French's mustard
1/3 cup Sticky Fingers BBQ sauce (or your favorite)
(If you like it hot you can add some Texas Pete to your taste)
Directions:
Spray skillet and add onion and garlic. Saute until onion becomes soft, 2-3 minutes. Add ground meat and chili powder and brown over medium heat until cooked through, 7-9 minutes. Meanwhile, in a large pot or slow cooker, add all canned ingredients and sauces. Drain meat and add to pot. Stir ingredients together, bring to a boil and reduce to simmer for at least 30 minutes. This is good eaten right away or can continue to simmer for a couple of hours. I like to serve it with shredded sharp cheddar, a dollop of sour cream and tortilla chips.
This freezes well. I often divide leftovers in to individual portions to freeze for lunches or a quick weeknight meal.

I've never added mustard to my chili but it sounds pretty good. I might try that next time. Thanks for the suggestion!
I love this recipe and am making a pot of it today! It's so much easier than my other recipe and tastes even better - yum-o!
I have to say the same thing as Brandy, I've never put mustard in my homemade chili before. But I think I will have to give it a try. Thanks for posting :o)
